Gluten & Dairy Free Chicken Fajitas

Chicken fajitas are one of my favorite meals to make. This recipe makes me forget I ever needed cheese, flour tortillas, or sour cream!

How to make Gluten & Dairy Free Chicken Fajitas

Serves: 4 | Prep: 15 mins | Cook Time: 15mins

Ingredients

Prep

Step One: Slice peppers and onions into strips. Chop cilantro and set aside.

Step Two: Heat 1 ½ tbsp of oil in a skillet over medium-high heat. Add sliced peppers and onions to the skillet. Cook and stir for 3-5 minutes or until browned. Set aside in a covered bowl.

Step Three: Heat the remaining 1 ½ tbsp of oil in a skillet over medium-high heat. Add the chicken to the skillet and cook and stir for 3-5 minutes until the chicken is cooked all the way through. 

Step Four: Add the ¼ cup water to the skillet and the two seasoning packets. Cut lime in half and squeeze the juice into the pan.

Step Five: Stir together ingredients for 1-2 minutes to allow the ingredients to soak up the seasoning. Cover pan with a lid to keep warm.

Heating up the Tortillas

Step Six: Heat another skillet over medium-high heat for 2-3 minutes. Warm the tortillas on the pan for 10-15 seconds per side until soft. 

Putting it all together

Step Seven: Fill the tortillas with the fajita filling and top with cilantro and cashew yogurt. Slice up the remaining lime and squeeze on for some zest.

The chicken fajitas can easily be paired with Spanish rice (or cauliflower rice) and fat free refried beans for a hearty meal. Enjoy!
